Today's breakfast experiment was:

Crispy Smashed Pesto Broccoli & Walnuts
over Avocado Toast with Poached Eggs.

(I apologize ahead of time for late responses. Haven't had much time to do anything but post occasionally. Plus classes are starting up soon. It'll be crazy.)

So this experiment is normally microgreens, instead of broccoli, with pesto fried sunflower seeds instead of walnuts. But I'm starting to want to try new options to keep the recipe exciting. It's a really great way to revamp avocado toast. Plus use what you've got in the fridge right???

- I take a cube of my frozen homemade pesto, and throw it into a nonstick pan. I don't add as much cheese, or oil, so that it's healthier pesto.
- toss in a handful of veggie and a small sprinkling of nuts. the original recipe is for sunflower seeds.
- cook it until everything gets nice browning. It adds a lot to the flavor and makes for nice crispy bits.
- smash a small avocado across 2 slices of high fiber bread and season to taste.
- Poach 1-2 eggs
- Onto the avocado toast, layer your veggie and nut mixture, your poached egg/s, then season with salt, pepper, and flaked red peppers for punch.
- Inhale.

I'm trying to include more veggies in my breakfast! This has lots of fiber in the bread, healthy fats from the avocado, walnuts, and olive oil in my homemade pesto. The eggs were poached, so no added fat in the prep. I was okay with the higher fat content because I knew I wouldn't be able to eat until supper. So it evened out for me.
